Keto Carnivore Mini Corn Dog Muffins | Zero Carb, High Protein Snack

These are zero carb, keto carnivore corn bread muffins with mini hot dogs (aka, corn dog muffins)! They are low carb, gluten free, and a perfect appetizer or addition to any carnivore/keto meal. There's actually no corn or corn flour in these corn bread muffins (corn free corn bread?), only healthy fats and protein.


The mini hot dogs we use are from Teton Water's Ranch. Teton's is awesome. They're actually verified by the Savory Institute, indicating regenerative and responsible grazing practices. All of their products are 100% Grass-Fed and Grass-Finished Beef, Certified Humane and contain zero fillers.

As a note, to make this recipe full carnivore, omit any seasonings that you are sensitive to and do not add the diced jalapeños. You can also try finding a cream cheese that is 'jalapeño' flavored, but we recommend using a raw source of cream cheese, if possible, otherwise an Organic cream cheese.


Without the OOOFlavors corn bread drops, there will be little to no 'corn bread' flavor. That does not mean these will not taste good, they just simply will not taste like mini corn dog muffins, just mini dog muffins.

0 carbs | 6.6 fat | 3.4 protein


Ingredients

  • 2 oz cream cheese

  • 1/4 tsp sea salt

  • 1/2 tsp baking powder

  • 1/2 tsp garlic powder (optional if you are sensitive, avoid)

  • OOOFlavors Corn Bread drops (25-30) - optional, but provides the corn bread taste

  • 2 eggs

  • 10 g butter, ghee, or tallow (melted)

  • 3 mini Teton Water’s Ranch hot dogs

  • Diced jalapeños - optional, but typically used in these muffins for a little spice


Instructions

  1. Preheat oven to 350

  2. Mix cream cheese with a little water or milk to smoothen out. Just a little - we don't want any chunks.

  3. Add sea salt, baking powder, garlic powder, and oo flavoring drops

  4. Add in eggs and stir

  5. Add ghee / butter / or tallow

  6. Chop the mini hot dogs in half

  7. Spray muffin pan. Pour batter equally into 6 muffin holes. Don’t put the hot dogs in yet

  8. Bake at 350 deg for 5 min

  9. Take out and place one half hot dog vertically in each

  10. Back in oven for another 8-10 min - done!
