Roasted Lemon & Herb Chicken Recipe

Ingredients for Chicken Bed

  • Veggies for bed. We used delicatta squash, celery, carrots 

  • 1 Lemon

  • 2 tsp thyme or about 5 sprigs of thyme 

  • 1 tsp rosemary or about 3 sprigs 

  • 1 tsp salt

  • 1/4 tsp pepper 

  • 2.5 T butter melted 

Ingredients for Chicken 

  • 3.5 lb pastured chicken 

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 3 garlic cloves minced

  • 1.5 tsp thyme 

  • 3-4 slices lemon 

  • 2 tsp rosemary 

  • 4 T butter 

Directions:

  1. Let chicken sit out at room temp for min 1.5 hours

  2. Chop up veggies & 1 lemon to prepare chicken bed. 

  3. Melt butter. Combine veggies, butter & spices in a bowl and then place in a roasting pan 

  4. Combine the salt, pepper, garlic cloves and thyme. Then season the chicken cavity with these spices and lemon slices. 

  5. Prepare rosemary butter (slightly melt butter and add in rosemary).

  6. Spread some butter under the skin

  7. Truss the chicken 

  8. Spread the remaining butter all over the skin 

  9. Place chicken on vegetable bed

  10. Roast at 475 for 20 minutes

  11. Reduce temperature to 400 and cook until internal temperature reaches 160 deg F, about 45 minutes.

  12. Transfer chicken onto a cutting board and let sit for 20 minutes before carving
