Say hello to the simplest carnivore diet ice cream recipe! This raw vanilla ice cream is full of healthy fats and is the perfect keto or carnivore dessert. With only 2 ingredients, it is incredibly simple, contains zero sugar, and is an incredibly low carb ice cream. The taste and texture is comparable to Rebel Creamery ice cream, but with fewer ingredients and better macros (see images below for a comparison between this raw vanilla ice cream & Rebel's vanilla ice cream).

Have you ever made your own ice cream? It's actually really simple, and you don't have to have an ice cream maker. In the video below, we show exactly how we make it in our stand mixer ice cream maker, but we also share how to make this if you do not have an ice cream maker. So, no excuses! Give it a shot.
Ingredients (for roughly 2 pints):
2 cups raw heavy cream (can pull from raw milk, see video)
3 raw egg yolks
1/4 tsp Redmond real salt
Optional sweeteners: pure stevia, pure monk fruit, honey, or glycine powder*
Optional flavoring: vanilla extract, other extracts, cinnamon*
*We used 1/4 tsp pure stevia powder & 1/4 tsp organic vanilla extract
If you have raw milk, leave in the fridge until cream visibly separates and then pull cream
Blend cream, yolks, & other additions
Pour into a pre-frozen ice cream maker and allow to churn until thick
Store in fridge & enjoy!
