Low Carb Pesto Pasta

This low carb pesto pasta recipe is super macro friendly, voluptuous, perfect for the keto diet, is Vegan, & dairy/gluten free. It's awesome.

To make this recipe, you will need our favorite low carb pasta substitute -- PALMINI!

If you do not have Palmini, you can make this just as low carb by using zoodles (zucchini noodles) or any other noodle alternative (or with pasta if you are not keto or do not eat low carb!)

MACROS for simple pesto pasta (pesto sauce + palmini):

12 carbs (6g net) | 5 fat | 6 protein

MACROS for more voluptuous dish (pesto sauce + palmini + zoodles + pine nuts)

16 carbs (8g net) | 12 fat | 8 protein

*This recipe can easily be made higher protein by adding chicken, chicken thighs, ground beef, fish, tofu, or your favorite source of protein.

**If you'd like to make it lower carb, use less palmini & increase the amount of zoodles.


  • 1 package of Palmini hearts of palm (about 181 grams total)

  • 100g zucchini noodles (zoodles)

  • 1 serving of our creamy avocado pesto

  • 10g pine nuts

  • Spinach


  1. Drain & rinse Palmini

  2. Lightly saute the Palmini & zoodles in a non-stick cooking pan until desired - can just heat in microwave too!

  3. Add handful of spinach to the pan to lightly wilt the spinach

  4. Toss noodles in 1 serving of the avocado pesto until well covered

  5. Sprinkle pine nuts on top

  6. Top with desired protein source (optional) & any extra salt/pepper to taste
