These super easy keto breakfast scramble has keto-friendly (low carb) hash browns, green veggies, steak, & eggs - supplying you with ample amounts of nutrients, healthy fats, & protein. Perfect for a healthy keto breakfast or low carb meal!
If you do not have a cast iron skillet, you can make in any normal pan or even bake it in the oven.
MACROS for entire dish:
13 carbs (7g net) | 30 fat | 51 protein
You can easily make this dish lower fat or lower protein by reducing the amount of meat or eggs.
1 package of hearts of palm Palmini (roughly 170g)
5 oz grass-fed & finished ribeye steak (we use Butcher Box)
3 eggs (or however many eggs you want to eat)
150g bok choy (or green vegetable of your liking - optional, but not really :)
Handful of spinach
Sea salt & pepper to taste
Heat a large pan and prepare steak by rubbing with salt and pepper
Sauté steak on pan until done to your liking (we like ARAP - as rare as possible lol)
Drain and rinse the palmini, pat dry with a towel to remove excess liquid, & chop up using a knife or scissors until it resembles hash browns
Add palmini to sprayed skillet and sauté until slightly golden brown
While that is cooking, chop up your bok choy into skinnier pieces and add to the same pan to cook. Mix with the hash browns (or leave the bok choy on the side, your choice)
Mix in a handful of spinach as well as your salt and pepper to taste
Crack the eggs on top of the bake
Reduce to simmer and cover until egg whites are cooked. Watch to make sure yolks don’t over cook
Top with the steak and additional seasonings of choice
A Note on Palmini
The hash browns are made using an amazing low carb pasta substitute = palmini! Palmini is simply hearts of palm in linguini form. We found our palmini on Amazon, linked here! Let us know if you try this recipe!
