Keto Adaptogenic Brownies



These Keto / low carb brownies are high in protein, healthy, & contain zero sugar or dairy. They're 'stress reducing' because of the mushroom powerhouse - REISHI. Combined with healthy fats and the antioxidant power of cacao, these brownies pack a nutritional punch that are perfect for a relaxing healthy snack or pre-bed dessert. 


Reishi has the ability to revitalize the entire body. Reishi is nothing new to the world – it’s been used in traditional Chinese medicine for over 2,000 years. In the Western world, people are just now starting to use Reishi to help enhance their sleep, cope with stress, and cure seasonal allergies.


MACROS per serving (out of 8):

6 carbs | 20 fat | 8 protein


Ingredients

  • 6 eggs

  • 60 grams cacao powder

  • 160 grams cream cheese (kite hill for dairy free)

  • 120 grams pumpkin puree

  • 80 grams coconut oil

  • 2 tsp vanilla extract

  • 1/2 tsp baking powder

  • 1/2 tsp pink himalayan sea salt

  • 3 tsp pure stevia (sweetener type and amount will vary by preference)

  • OR sub w/ pure maple syrup or honey if you're not a fan of stevia! 


Instructions

  1. Beat all 6 eggs in a stand mixer until fluffed

  2. Add in the rest of the ingredients and return to stand mixer to combine

  3. Spray 8x8 baking dish or circular pie pan with non-stick cooking spray. 

  4. Pour batter into baking dish and evenly distribute it all around

  5. Bake at 350 for 25-30 minutes, watching to ensure the brownies do not get overcooked!
