Ingredients
Base Recipe:
24 grams coconut flour
15 grams Salted Caramel True Nutrition Egg White Protein Powder
15 grams gluten free flour (I use Otto’s Cassava Flour)
1 tsp baking powder
1/4 tsp salt
1/4 cup sugar substitute (I use stevia)
3/4 cup unsweetened almond milk1 egg
20 drops liquid stevia (can sub more sugar substitute)
1/2 tsp extract (depends on flavor variation, see below!)
150-250 grams fruit (the amount depends on the type of fruit and flavor variation)
Instructions
Preheat oven to 350 deg. F
Mix all dry ingredients (first 6 ingredients)
Add the almond milk, 1/4 cup at a time and mix to avoid clumps
Mix in the egg, liquid drops and extract
Mix in the chopped fruit, save a few pieces for topping
Pour the mixture into a Pam-sprayed baking dish with a 9 in diameter
Bake for 15-18 min, or until a toothpick comes out clean
6 Flavor Variations
1. Strawberry Vanilla
The base recipe is not modified. To give it the strawberry vanilla flavor profile, use:
Vanilla flavored protein powder
200-250 g chopped strawberries
Vanilla extract

2. Lemon Blueberry
The base recipe is not modified. To give it the blueberry lemon flavor profile, use:
Lemon flavored protein powder (if possible, otherwise vanilla will work juse fine!)
200 g blueberries
Lemon extract or fresh lemon juice

3. Spiced Fig Cake
The base recipe is slightly modified. For this flavor profile, use/add:
Vanilla protein powder
1 tsp vanilla extract, not 1/2 tsp
Add 1/2 tsp cinnamon to dry mixture
Add 1/4 tsp nutmeg to dry mixture

4. Vanilla Peach Cake
The base recipe is not modified. To give it the vanilla peach flavor profile, use:
Vanilla flavored protein powder
Vanilla extract
200 g sliced peaches

5. Chocolate Cherry
The base recipe is slightly modified. For this flavor profile, use/add:
Chocolate protein powder
1/2 tsp vanilla extract
Add 5 g cocoa powder or cacao powder --> reduce flour amount by 5 grams – so 10 g total

6. Strawberry Lemon
The base recipe is not modified. To give it the strawberry lemon flavor profile, use:
Lemon flavored protein powder
Lemon extract or fresh lemon juice
200-250 g sliced strawberries
