Healthy Rumaki

Our healthy rumaki recipe is the perfect keto snack or keto appetizer for anyone following a ketogenic diet or even a carnivore diet!. It contains a ton of nutrients from liver, and we've adapted the traditional rumaki recipe to be even more low carb and to contain healthy fats and proteins!


We've really wanted to incorporate more liver into our diets, especially now that we rely more on meats for our nutrients following a Keto diet and potentially looking to cycle onto a carnivore diet every once in a while. Liver... can be intimidating! So many people say it tastes bad, so we've been a little discouraged from trying it. HOWEVER --> a LONG time ago, we used to frequent this Chinese restaurant that served Rumaki... and we LOVED IT... (at the time, we didn't know there was liver in it LOL)...So, we had to remake it!


Rumaki is essentially bacon wrapped liver, and typically it contains water chestnuts. In order to make this lower carb, we replaced the water chestnuts with our new favorite vegetable -- Belgian endives! Details below!

Ingredients

  • 8 oz Liver (we used bison liver from Northstar bison)

  • 8 pieces of bacon (sugar free!)

  • Belgian endives or other low carb veggie

  • Salt & pepper

  • Toothpicks

Instructions

  1. Preheat oven to 375

  2. Cut liver into small cubes. We found that small ~ 0.5 oz pieces worked well.

  3. Season liver with sea salt & pepper, set aside

  4. Slice Belgian endive root into small little circles (similar shape to water chestnuts)

  5. Cut raw bacon pieces in half

  6. Roll the liver & endive piece in the bacon, and secure with tooth pick

  7. Bake at 375 for ~ 12-15 min

That's it! Super easy nutritious and tasty snack, appetizer, or meal for a keto or carnivore diet... or anyone!!!
