
These Green “Apple” Low Carb Protein Muffins are about to blow your mind — the muffins have a “apple cinnamon” vibe, but without all of the sugar and carbs! They are high protein, low carb, gluten free, and dairy free!
There are actually no apples in this recipe. A low carb and low sugar alternative for apples we discovered this past summer is green tomatoes! Unlike most other tomatoes, green tomatoes have a firm outer shell, so they can still offer that crispy component to baked goods. While an apple has ~ 19 g sugar, and is ~ 25 g carbs (which would not work on a keto diet), a green tomato has only ~ 4 g sugar and ~ 6 g carbs.

Ingredients
80 grams Oats (ground to flour)
2 scoops Salted Caramel True Nutrition Egg White Protein Powder
1 cup Almond Flour
1 tsp Pure Stevia (use sweetener of choice)
1/2 tsp Baking Powder
1/2 tsp Baking Soda
2 tsp Cinnamon
1/4 tsp Salt
1/2 tsp Nutmeg
2 tbsp Coconut Oil (melted)
2 Eggs
1/2 cup Almond Milk
2 Green Tomatoes (chopped)
Instructions
Preheat oven to 350 degrees.
Combine first 9 ingredients (dry ingredients in bowl). Mix well
Add the coconut oil, eggs, and almond milk. Stir until well mixed
Add the chopped green tomatoes
Spray two muffin tins. This should make ~ 18 muffins
Fill each muffin tin about 75% full
Bake at 350 for 13-15 min
