Easy Eggs in Purgatory

This low carb eggs in purgatory (egg skillet bake) is super easy to make, macro friendly, and is a great option for a Keto-friendly breakfast or entree.

If you do not have a cast iron skillet, you can make in any normal pan or even bake it in the oven.

MACROS for entire dish (based on 3 eggs):

10 carbs (7g net) | 21 fat | 21 protein


  • 6g avocado oil

  • 3/4 cup unsweetened tomato sauce

  • 3/4 tsp salt

  • 1 garlic clove (or 1/2 tsp garlic)

  • 1/4 tsp pepper

  • 1/4 tsp cumin

  • 3 eggs (or however many eggs you want to eat)


  1. Heat avocado oil on skillet

  2. Add minced garlic

  3. Mix tomato sauce & spices in side bowl

  4. Add to skillet

  5. Heat until slightly bubbling

  6. Crack the eggs on top of the bake

  7. Reduce to simmer and cover until egg whites are cooked. Watch to make sure yolks don’t over cook

  8. Top with fresh chopped cilantro or parsley
