Preheat oven to 375 and prepare baking pan with foil and spray
Using a blender or food processor, crush pork rinds into a fine flour
Combine the eggs and sausage in a bowl and then stir in the pork rinds
Spread into thin circular shapes on sprayed pan
Bake for 20-30 minutes (this will depend on how thin your patties are)
Allow patties to cool once finished before removing from pan
