carnivore cake - zero carbs

If you have been missing a "fluffy" consistency similar to a muffin or croissant on a more animal based, meat heavy diet, this carnivore cake comes in clutch. All it takes is a little whipping and you'll be surprised with how much angel like tendency egg whites can achieve :)

The nutrition of this cake is spectacular. High in protein and zero carbs - you can add back in extra fat if you are following the keto diet by topping the cake with butter or some raw bone marrow!

Ingredients:

  • 150g egg whites

  • 1/4 tsp cream of tartar (technically optional)*

  • 15g egg white protein powder**

  • Optional: sweetener such as stevia, monk fruit extract, or pure glycine powder*** and cinnamon

*Cream of tartar is a byproduct of wine production, you technically do not have to include this, but cream of tartar does help "floof" up the egg whites, allowing for stiff peaks to form and for the whites to maintain a fluffy consistency.

**You can use any protein powder, but egg white protein powder does seem to give the cake a better consistency overall. In the video, we demonstrate the difference in consistency between egg white protein powder and a collagen protein powder.

***Using pure glycine to sweeten the cake will keep this cake recipe entirely carnivore. However, if your protein powder has some sort of sweetener in it, you can omit this step. Totally up to you! Cinnamon is also optional, but it will just give the cake a nice flavor if you prefer.

Directions:

  1. Preheat oven to 375 degrees F

  2. Measure out egg whites in a dry bowl (ideally a stand mixer)

  3. Add cream of tartar (if using) and whip the egg whites (using stand mixer or manually with a hand mixer - a lot more difficult and doesn't get as stiff - until "stiff peaks" form

  4. Gently fold in protein powder and sweetener of choice

  5. Grease a baking dish with butter or tallow

  6. Spoon fluffed egg white mixture onto baking dish and form into a cake shake

  7. Bake in oven for 20-25 minutes, until golden at the top

Macros for entire recipe: depends on how much egg whites and what protein powder you are using, but it is roughly 29g protein, 0g carbs & 0g fat.
