What does beef tongue taste like?
Beef tongue is relatively similar to cuts of red meat, such as lamb shank or ank steak, but fattier and more mild. The texture is very dense yet tender, and when shredded, beef tongue is similar to beef barbacoa or carnitas! AKA: delicious!

Grass fed & finished beef tongue (2-2.5 lbs)
1+ tsp Real Salt
Place beef tongue in crockpot & heavily season with salt. Add bay leaves if desired.
Pour in enough water to completely cover the beef tongue.
Set crockpot to low & cook for 8 hours, until the tongue is tender enough to poke through with a fork and come out easily.
Once finished, remove beef tongue from the crockpot and allow to cool. Once cooked, place beef tongue onto a working surface & begin to peel the outer layer of skin. It is much easier to peel the skin off after the tongue has been cooked, so you should be able to slit the skin with a knife and use your hands to peel.
Once cooled & peeled, using a fork, shred the beef tongue meat by scraping at the surface & ‘pulling’ down.
To keep the meat juicy, save the broth that was created in the crockpot & pour desired amount over meat!
